Q. A few couples attending our wedding are vegan, and I don't know if we need to prepare something special for them. How far should we go to accommodate our guests' dietary needs?
A. Your main concern should be to make sure that the majority of the guests can eat what's served. If you know in advance that some vegan couples will be attending, you can speak to the catering manager about preparing a separate vegan meal. Remember that while many vegan and vegetarian options overlap, vegans do not eat eggs or dairy products (some also shun products derived from insects like honey or certain food dyes). Many caterers will also offer the "silent" optiona vegetarian or vegan dish provided upon request but not advertised. This means that during dinner, a guest would have to ask their server if an off-menu dish is available.
