So rather than pour a celebratory glass for every guest an expense of at least $7 per person (which is usually charged on top of the main bar bill) ask servers to circulate with trays of pre-poured flutes before the toast. That way, the guests who want to drink some bubbly can, while others can raise a glass with their beverage of choice.
